Cranberry Chicken Salad

Great made with either chicken or leftover turkey.

Ingredients

2 cups chicken, cooked, white meat, skin removed, chopped

1/2 cup mayonnaise, light or reduced fat

1 cup celery, chopped

1/4 onion(s), red, medium, chopped

1/4 cup cranberries, dried

1 teaspoon Dijon mustard

2 tablespoons nuts, almonds, slivered

1/4 teaspoon salt

1/4 teaspoon pepper, black, ground

4 cups spinach, fresh baby

Preparation

Arrange spinach onto plates. Mix remaining ingredients together in a medium size bowl. Spoon chicken salad over spinach and serve.
