Grilled Fish with Fresh Salsa Topping

Such a simple dish, and so delicious! We used salmon but you can use swordfish, halibut, tilapia or any favorite.

Ingredients

cooking spray

1 pound salmon, wild, steaks or filet

4 tomato(es), Roma, or other, seeded and chopped

1/2 onion(s), medium, chopped

1 jalapeno chili pepper, fresh, seeded and chopped

1/2 teaspoon salt

1/4 teaspoon pepper

1 lime(s), juice only

1 tablespoon cilantro, chopped

1 teaspoon garlic, minced

Preparation

Chop all vegetables and herbs and combine in a small bowl. Add lime juice and stir together. Salt and pepper to taste. Heat an outdoor or indoor grill pan to medium heat. Pat salmon dry with paper towel. Salt and pepper salmon, then spray tops with cooking spray. Place salmon on grill and cook for about 3 to 4 minutes per side until cooked through. Remove from grill, top with salsa and serve.
