Grilled Greek Chicken

This is a light chicken dish that will help get some veggies into your meal. Great served with our Orzo with Squash and Feta recipe to round out your meal.
1 1/2 pounds chicken breast, boneless and skinless
1/2 teaspoon seasoning blend, lemon pepper, salt free
1/4 teaspoon basil, dried
12 calamata olives, pitted, halved
3 tablespoons salad dressing, balsamic vinaigrette, lowfat, such as Newman's Own
2 cups tomato(es), grape or cherry, halved
1/4 cup cheese, feta, lowfat,crumbled
1/4 cup basil, fresh, torn
3 tablespoons nuts, pine nuts, toasted
1/4 teaspoon black pepper
Heat indoor or outdoor grill to medium heat. Place chicken between two sheets of plastic wrap and pound to 1/4 inch thickness. Season chicken with seasoning blend and dried basil. Grill chicken about 5 minutes per side until cooked through and juices run clear. Remove from grill and keep warm. In a medium bowl, combine tomatoes, olives and vinaigrette. Heat skillet to medium heat and add tomato mixture. Heat until tomatoes are softened, approx. 3-4 minutes. Remove from heat, serve over grilled chicken and garnish with fresh ground black pepper, feta, basil and pine nuts.
