Garlic Shrimp and Pineapple Skewers

If using wood skewers, be sure to soak them in warm water for at least 30 minutes before using. Great served over brown rice or baby spinach.

Ingredients

1 1/2 pounds shrimp, raw (medium or large)

2 tablespoons olive oil

1 tablespoon garlic, bottled minced

1 tablespoon honey

1 tablespoon lime(s), juice

1 teaspoon chili powder

1 shallot(s), chopped

1 pineapple, fresh, chunks

1 mango, fresh, chunks

2 pepper(s), bell, red, chunks

1/4 cup cilantro, fresh, chopped

Preparation

Clean, devein and shell shrimp leaving tails on. For marinade combine oil, garlic, honey, lime juice, chile powder, shallot, and cilantro in a medium bowl. Add shrimp, mix well and refrigerate for 15-30 minutes. Heat indoor or outdoor grill to medium heat. Thread skewers with bell pepper, mango, shrimp and pineapple. Grill for about 5 minutes on each side basting with marinade as needed while grilling. Cook until shrimp is no longer translucent in appearance.
