Oatmeal with Berries and Walnuts

Serves: 4

Prep Time: 5 minutes

Cooking Time: 15

Difficulty: Easy

Comments

Steel cut oats take a little longer to cook, but are nutty and delicious, and provide more fiber than quick cooking or old fashioned oats.

Ingredients

1 cup oats, steel cut, dry

3 cups water

1/4 teaspoon salt

4 teaspoons honey

1 cup milk, 1% fat

1 1/2 cup strawberries, fresh, sliced

2 tablespoons nuts, walnuts, chopped and toasted

Preparation

Place 3 cups of water in a medium sauce pan. Bring to a boil over high heat. Add salt and oatmeal, stir, and reduce heat to simmer. Cover and cook for about 15 minutes, stirring occasionally. You can cook it longer if you like it less chewy). Turn heat off and let stand for 5 minutes with cover on. Serve in bowls with milk, honey, walnuts and sliced berries on top.
