This a light and delicious vegetarian breakfast or brunch recipe. Serve with some whole grain toast or English muffin to round out your meal.
1/2 pound asparagus, fresh, or frozen
2 egg(s), large
2 egg(s), large, whites only
1/4 teaspoon garlic powder
3 tablespoons cheese, cheddar, light, shredded, thinly shredded (about 1 ounce)
salt and pepper, to taste
Preheat broiler. Remove tough ends from asparagus. Coat a nonstick skillet with cooking spray and heat over medium. Add asparagus and cook for about 3 minutes until crisp tender, stirring occasionally. Arrange asparagus in a single layer in the skillet. Place eggs, egg whites (discard unused yolks) and garlic powder in a small bowl and whisk together. Pour egg mixture over asparagus. Top with cheese. Place skillet under broiler for 1 to 2 minutes until eggs are cooked through. Remove from oven and cool slightly before serving.
