These are a delicious meal by themselves. Made with ground, lean turkey to lower the fat.
6 tortillas, whole wheat 7 inch
3/4 pound ground turkey, lean
2 teaspoons garlic, bottled minced
1 can (15 ounces each) kidney bean(s), rinsed and drained
6 ounces taco sauce, bottled
1/4 cup corn, frozen white kernels
2 teaspoons chili powder
2 cups lettuce, chopped
3 tomato(es), medium, chopped
3/4 cup cheese, cheddar, low fat, shredded
Coat a nonstick skillet with cooking spray. Place skillet over medium heat and brown the turkey and garlic. Drain fat. Stir in beans, taco sauce, corn and chili powder. Simmer for about 10 minutes. Cover the tortillas with a damp paper towel and microwave for about 1 minute or until warmed. Divide the bean mixture among the centers of the tortillas and top with cheese, lettuce, and tomatoes. Fold up the bottom and fold in the sides of the tortilla and enjoy eating with your hands.
