Slow Cooker Thyme Chicken Salad

This is an easy way to serve chicken for dinner. You can also serve over rice instead of lettuce for a more kid friendly meal. Substitute chicken tenders or bone in chicken breasts for the chicken breasts if you like.

Ingredients

2 pounds chicken breast, boneless and skinless

3 teaspoons garlic, crushed from jar

1 teaspoon thyme, dried

1 teaspoon parsley, dried

1/2 teaspoon salt

1/3 cup orange juice

1 tablespoon vinegar, balsamic

8 ounces lettuce, mixed greens

2 tomato(es), Roma, chopped

1/4 cup kalamata olives

1/2 cup cheese, feta, lowfat,crumbled

1/2 cup salad dressing, vinaigrette, reduced fat

Preparation

Place chicken in slow cooker and sprinkle with garlic, thyme, parsley and salt. Pour in orange juice and vinegar. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours. To make the salad toss the salad greens, tomatoes, olives and feta. Divide the chicken atop the salads and drizzle with dressing or serve it on the side.
