Slow Cooker Cashew Chicken

Cooking Time: 3 to 4 hours on High or 6 to 8 hours on Low setting
This is a super easy to prepare meal. Serve over brown rice or couscous. For super easy rice, try the microwavable frozen packages of whole grain brown rice.
1 can (10.75 ounces) mushroom soup, 98 percent fat free,condensed, such as Cambells Healthy request
3 tablespoons soy sauce, low sodium
1 teaspoons ginger, ground
1 1/4 pounds chicken tenders or boneless, skinless chicken breast
1 package (16 ounce) vegetables, stir fry, frozen
3/4 cup mushrooms, Crimini or button or combo, sliced
1/3 cup nuts, cashews, roasted and salted, crushed
Combine mushroom soup, soy sauce and ginger in a slow cooker. If desired brown the chicken pieces in a tablespoon of olive oil prior to adding to the slow cooker (this is not necessary but adds flavor). Stir in the chicken, frozen vegetables and mushrooms. Cover and cook for 3 to 4 hours on high or 6 to 8 hours on low. Stir cashews into the mixture just prior to serving. Great served over rice or couscous.
