Caprese Sandwich

We like using fresh heirloom tomatoes in differing colors when availabe, but any fresh tomatoes will be good. You can also heat this in your Panini sandwich press or grill it! Use thin sliced bread or sandwich thins.

Ingredients

8 slices bread, thin sliced, whole wheat

4 tomato(es), large, sliced

4 teaspoons pesto sauce (prepared)

4 ounces cheese, mozzarella, low fat, thinly sliced into 8 pieces

1/4 cup basil, fresh, sliced

1/4 teaspoon salt

1/4 teaspoon pepper, black, ground

Preparation

Spread pesto on sandwich thins. Layer mozzarella, tomatoes, pepper and basil. Repeat. Grill or warm in Panini press if desired.
